Barley with shrimps, fava beans and dried tomatoes

240g Bartolini Umbrian pearl farro
200g shelled shrimps
300g fresh shelled fava beans
4 dried tomatoes
Arugula to taste
Salt and pepper
Bartolini extra virgin olive oil


Boil the barley in salted water for 20 minutes.
Meanwhile, sear the shrimps on both sides in a pan and season them with olive oil to make them shiny.
Add in a bowl the parboiled fava beans, the shred dried tomatoes and the arugula previously cleaned, finally add also the barley and season all with olive oil, tossing well.
